Shredded Beet and Vegetable Waffle
Ingredients
- 3 medium beets shredded
- 1 medium Zucchini shredded
- 3 Fingerling Potatoes Shredded I like using the purple ones
- 3 eggs
- 1 tbsp Taco Seasoning
- 1 cup Rice Optional

Instructions
- You will want to pull some of the moisture out of the shredded vegetables before using them. You can do this with a tea towl or some cheese cloth. I opted to not do this, AKA I totally forgot. I just increased the cook time in the iron. A good way to know they are done is when the steam become less noticeable.
- Preheat your waffle iron
- Combine all your shredded vegetables into a large mixing bowl.
- Whisk the 3 eggs together with the taco seasoning.
- OPTIONAL If you want to add some more texture and substance to this meal you can add some rice. this just makes it a little more filling, but these are yummy either way.
- Put a layer of the mixture on the waffle icon, and cook for about 10min.
Recipe Notes
Keep an eye on it as all waffle makers are different. When the steam decreases it time to pop it out.

Taco Flavored Chicken Salad




Ingredients
- 12.5 oz canned chicken shredded chicken breast if you have it
- 1 tbsp lime juice
- 1 tbsp Taco Seasoning
- 2 tbsp Mayo

- Drain water from the canned chicken
- mix all the ingredients in a medium bowl
